Well now is the time, as we have a very exciting opportunity for an Apprentice Commis Chef to join our team at Heathrow Airport. 

You do not need to have any experience as full training will be provided as part of the Apprenticeship. This is ideal for a school leaver or someone wanting a career change. Apprenticeship are for everyone regardless of age!

Over a 12 month period you will be trained to become a fully Qualified Commis Chef.

What you'll be doing:

WHAT IS AN APPRENTICESHIP?

An apprenticeship is a funded programme where an individual learns new skills, knowledge and behaviours in a chosen sector. An apprenticeship will enable you to work and earn a wage whilst developing and gaining new skills as an employee.

Alongside your day to day duties, you will complete the Commis Chef Level 2 Apprenticeship. This is a nationally recognised qualification and the primary objective of the Commis Chef is to learn and understand how to carry out the basic functions in every section of the kitchen. You will be supported through this qualification by your Personal Development Coach who will visit you at your place work every 6-10 weeks. You will also attend 6 workshops including an Introduction day at a location outside your normal place of work. All travel expenses will be covered by your employer. You are not expected to complete any of your Apprenticeship work outside of your normal working hours and will be given set time each week to complete your work.

More about the role:

  • Our Chef teams vary in size from single chefs sites to site where there are up to 8 chefs working in a team
  • We follow project 2020 menus which are a company template offer for lunch through to dinner. 
  • Our busiest outlets will provide up to 1000 covers for lunch, most units average around 150+ meals.
  • All dishes we cook are supported with in depth recipe cards.
  • Our recipes are broken down and graded into chefs skills from level 1 Chef, (Commis and Apprentice) level 2 chef, (Chef de Partie) and Level 3 (Snr Chef de Partie). We also complete competition work and serve hospitality menus which provide broader training skills development.
  • Breakfast is also an important meal, these can see as many as 200 transactions
  • You will learn how to prepare, cook and assemble menus aligned to client environment with centrally driven menus.
  • You will learn to follow set portion control and ensure all food is purchased in the first instance from our preferred list of supplies.
  • You will learn to ensure all food is stored, handled and packed at the correct temperature and in accordance with Food Handling and Hygiene Regulations.
  • You will learn to maintain records of temperatures and remedial action taken where necessary, reporting all issues to your line manager
  • You will learn to serve on the food counters in the client’s premises following all customer service standards where there are chefs theatre counters.
  • You will learn to use machinery as shown and be trained to ensure equipment is used safely and in accordance with legislation, and reporting of equipment issues to your line manager
  • To ensure that work areas are kept clean and that all waste is recorded and disposed of correctly.
  • You will learn to be competent and skilled to work in all areas of preparation, cooking and counter service (Chefs Theatre)
  • You will ensure the quality and presentation of the food is to the highest standard and specification.
  • You will ensure the quality and the presentation of hospitality catering is to the highest standard
  • You will attend and comply with any training by Brands, Health and Safety, Food Safety etc.
  • You will ensure you comply with current dress and personal hygiene regulations.
  • You will be responsible for monitoring and recording, day to day production schedule of each menu item.
  • You will be mentored by the Aviation Executive Chef
  • Initially you will not work on your own and you will be given the opportunity to work in various kitchens on site in order to gain experience
  • This role involves shift work over 7 days, 6.00am to 1pm, 1pm to 8pm, 7.00am 3.00pm

  • A positive attitude and committed to developing yourself 
  • Flexibility, the hours are varied as are the days so we are looking for people who are adaptable and understand the business need.
  • Must pay good attention to detail and takes a sense of pride in their cooking
  • The role is conditional on being able to clear security checks - Airports are secure security environments, to work with us you must be over 16, have 5 years continuous references which can include schools and education. Gaps in the 5 years references, we can support you with gaining the required evidence to support the gap.
  • Able to clear a DBS check-we, will support you through gaining airside passes

FURTHER INFORMATION ABOUT THE APPLICATION PROCESS

Your Apprenticeship is fully funded by Compass UK and Ireland, via the Apprenticeship Levy.

As a company, our Apprenticeship programme is subject to regulation from Ofsted and the Education and Skills Funding Agency (ESFA).For that reason, each candidate must meet certain criteria’s in order to be eligible for funding.  This ensures our offer is compliant with all the quality and funding rules. Therefore, you will be required to complete the following:

Eligibility Questionnaire – the questions asked here will determine if we can claim funding for your apprenticeship training with our training provider and the rules for this are set out in the ESFA funding rules 2018/2019.

Initial Assessments – These are positioning tests in English and Maths. Whilst they do not directly affect your eligibility for the apprenticeship they provide us with your current level of learning and help us build an individual learner journey.  This will establish if you are working at the required level in Maths & English that is needed in order for you to complete the learning within your chosen apprenticeship.

European Social Fund – The Skills Funding Agency operates as a co-financing organisation for ESF and assures EU funding is correctly spent. The European Social Fund (ESF) is a structural fund from the European Union. It improves the skills of the workforce and helps people who have difficulties finding work. All our apprenticeships are compliant with ESF funding.
